Banana Bread
(or Nanner Bread, depending on where you come from.)

Set your oven to 350 degrees Fahrenheit.
Grease the bottom of one 9x5 inch metal loaf pan or two 8x4 i www nch metal pans if you prefer.

Wet Ingredients
1 1/4 Cups of sugar, granulated, powdered or brown sugar,
1/2 Cup butter,
2 eggs,
3 or 4 big and very ripe mashed bananas,
1/2 Cup buttermilk,
1 teaspoon real vanilla,
1 teaspoon butter, walnut or butternut flavoring

Cream the sugar and butter together with a mixer or spoon, then add eggs, bananas, buttermilk, and vanilla, and give the mess a good stir until it is uniformly but coarsely mixed.

Dry ingredients
2 1/2 Cups all purpose flour,
1 teaspoon baking soda
1 teaspoon salt

Mix the dry ingredients well, then add them to the wet ingredients and combine just until everything is moistened, no more. Don’t overdo it.

You can add a cup of toasted walnuts if you have them; I prefer the richness of wild black walnuts or pecans, but the milder common English walnuts will do. You can also add chocolate mini chips, or even fresh or dried fruit like chopped pineapple, blueberries or chopped strawberries.

Pour the mixture into the 9x5 pan and bake for 1 hour 15 minutes;
or
divide into the 8x4 pans and bake both in the oven together for 1 hour.

Let it cool a bit before diving in.
